Timmermans Griotteke
GRIOTTEKE is both traditional and contemporary! Schaerbeek cherries, which had gone by the wayside for a few decades because they were so rare and difficult to harvest, have been rediscovered by lambic breweries such as the Timmermans brewery because of its bright red juice and tart-sweet taste. We give these Schaerbeek cherries six months to macerate in one of our young lambics. We then mix this cherry lambic with a lambic that has aged for 6 months in Pinot Noir and Burgundy barrels. The final touch? The secondary fermentation in the bottle, which starts as soon as this majestic black bottle is corked.
